Sweet Mango Chutney
    2 medium raw mangoes
    2 medium ripe mangoes
    10 tbls sugar
    2 tsp fresh minced ginger
    10 garlic cloves, minced
    2 tsp chilli powder
    2 tbls raisins
    100ml vinegar

Method
1.
Wash, wipe and peel the mangoes.  Cut them into 1" cubes, cover with sugar
  and set aside for 1 hour.
2. In a pan mix together everything except the raisins, place the pan over a
  medium heat.  Cover and cook until the raw mango cubes are tender.
3. Add the raisins and simmer for 5 minutes.
4. Cool and store in dry bottles.  Keep refrigerated.
