Mushroom Pilau
    400g basmati rice
    150g mushrooms, sliced
    1 large onion, sliced thinly
    2 garlic cloves, crushed
    1/2 tsp fresh ginger, grated
    1/2 tsp garam masala
    3 tbls vegetable oil

Wash the rice in several changes of water and let it soak in 4 cups of water
  for 30 minutes.  Drain thoroughly.
2. Heat the oil in a large heavy pan and add ginger and garlic.  Fry for 2 minutes.
3. Next add the onion and fry for another 2 minutes.
4. Drain the rice thoroughly and add to the pan, next add the mushrooms, garam
  masala and salt.  Mix well and sauté for 3 minutes.
5. Reduce the heat to medium.  Pour in 3 cups of water and bring to a boil. Cover
  the pan tightly and reduce the heat to very low.  Cook for about 30 minutes.
  Turn off the heat and let the pilau sit covered for 5 minutes.
