  Ingredients
 
     
    400g basmati rice  
    1 medium onion, chopped  
    75g green peas
Vegetable Pilau
    75g cauliflower flowerets (or any other veg)
    1 tsp fresh ginger, grated
    4 garlic cloves, crushed
    3 green cardamom pods
    2 1" pieces of cinnamon
    3 cloves
    2 bay leaves
    1/2 tsp black peppercorns
    1/2 tsp chilli powder
    1/4 tsp turmeric powder
    2 tbls vegetable oil  
salt

Method
1. Wash the rice in several changes of water and soak for 30 minutes.
2. Bring a large pan of salted water to the boil, add 1 tbls of oil, drain the rice and
  add it to the pan.  Bring back to the boil and then reduce the heat to a rapid
  simmer and cook for 10-15 minutes or until the rice is al-dente.  Once the rice
  is done, drain and set aside covered.
3. Preheat the oven to 200°C.
4. Heat 1 tablespoon of oil in a large pan.  Add cinnamon, cloves, cardamoms,
  peppercorns and bay leaves and fry for 2 minutes.  Then add ginger, garlic
  and onion and fry until golden brown.
5. Next add the cauliflower, peas, chilli powder, turmeric and salt and mix well.
  Cook on a low heat for 5 minutes.
6. Now take a large casserole dish and spread 1/3 of the rice on the bottom,
  then spread half of the vegetable mixture over the layer of rice.  Then spread
  another 1/2 of rice over the vegetables.  Then spread the remaining
  vegetables and rice.
7. Cover with aluminum foil and place on the casserole lid, place on the middle
  shelf of the oven and bake for 10 minutes.  Turn off the oven and let the pilau
  sit in the oven for 5 minutes.
8. Remove and serve straight away.
