Method |
1. |
Wash the rice
in several changes of water and soak for 30 minutes. |

Bring a large
pan of salted water to the boil, add 1 tbls of oil, drain the
rice and |

add it to the
pan. Bring back to the boil and then reduce the heat to a
rapid |
|
simmer and
cook for 10-15 minutes or until the rice is al-dente. Once
the rice |
|
is done,
drain and set aside covered. |

Preheat the
oven to 200°C. |

Heat 1
tablespoon of oil in a large pan. Add cinnamon, cloves,
cardamoms, |
|
peppercorns
and bay leaves and fry for 2 minutes. Then add ginger,
garlic |
|
and onion and
fry until golden brown. |

Next add the
cauliflower, peas, chilli powder, turmeric and salt and mix
well. |

Cook on a low
heat for 5 minutes. |

Now take a
large casserole dish and spread 1/3 of the rice on the bottom, |
|
then spread
half of the vegetable mixture over the layer of rice. Then
spread |
|
another 1/2
of rice over the vegetables. Then spread the remaining |
|
vegetables
and rice. |

Cover with
aluminum foil and place on the casserole lid, place on the
middle |
|
shelf of the
oven and bake for 10 minutes. Turn off the oven and let
the pilau |
|
sit in the
oven for 5 minutes. |
8. |
Remove and
serve straight away. |
